The limited-edition drink combines Baileys Original Irish Cream, coconut and pineapple, and is best served over ice and with a little umbrella, obviously.

Ingredients:
50ml limited edition Baileys Colada
Ice cubes
Frozen pineapple chunks
Slices of pineapple to garnish
Fruit juice and crushed or chopped coconut for the rim of the glass
Method:
Add 50ml of Baileys Colada, ice cubes and frozen pineapple chunks to a blender, and blend until smooth.
Dip the rim of the glass into a small amount of fruit juice and sprinkle the crushed coconut onto the juice so it sticks.
Pour into your favourite cocktail glass and garnish with slices of pineapple.
Add a mini umbrella to bring the taste of summer home and enjoy!
Et voila. Summer in a glass.
